Corned Beef & Brat Reuben Sandwiches

Brat-Corned Beef-Ruben

You will need:

  • Brats – Your favorite kind
  • Corned Beef
  • Swiss Cheese
  • Sauerkraut
  • Thousand Island Dressing (a yellow or brown mustard is also great)
  • Hoagie Rolls

Corned Beef can be purchased pre-cooked and sliced from the deli or cook your own corned beef brisket.  My favorite is oven baked for about 2-3 hours (depending on weight).  I apply a rub of brown sugar and then pour a can of Guinness Stout into the bottom of the roasting pan (I don’t use a roasting rack).  Slice your Corned Beef to your preferred thickness (I like a little less than one ¼”).

Grill your Brats according to instructions on package. Put your cooked Corned Beef slices on the grill when the Brats have about 1-2 minutes of grill time left.

When your Brats are finished slice them length-wise and set them back on the grill.  Place your Corned Beef on top of the Brat and top it all off with a slice of Swiss Cheese.  Leave on grill just long enough to melt the cheese.  Transfer your Brat, Corned Beef and Cheese combo to a Hoagie Roll.  Finish off your sandwich with Sauerkraut and Thousand Island Dressing.

It should go without saying that this is NOT a healthy sandwich.  You probably shouldn’t have this every week of the football season!
